6 Simple & Delicious Rice Cake Recipes

Leftover rice cakes that you couldn’t finish? Don’t worry, I've got you. Here are some simple and quick recipes to make sure nothing goes to waste.

#1 Cantonese Egg-Fried Rice Cake

Ingredients:

200g rice cake slices

2 eggs

1 tsp soy sauce

1 tsp sugar

Spring onions

Instructions:

  1. Boil the rice cake until soft, and cut into appropriate pieces.
  2. Fry rice cakes in oil until golden on both sides.
  3. Add beaten eggs and stir-fry with rice cakes. 
  4. Mix soy sauce and sugar, then garnish with spring onions.

#2 Sweet Potato Rice Cake Balls

Ingredients:

200g rice cake

1 sweet potato

2 spoons sugar

Instructions:

  1. Steam the sweet potato until soft, peel it, and mash it into a paste.
  2. Boil the rice cake until softened, then drain.
  3. Mix the sweet potato paste with the rice cake and form small balls.
  4. Pan-fry the rice cake balls.

#3 Crispy Spring Roll Fried Rice Cake

Ingredients:

200g rice cake

10 spring roll wrappers

2 tablespoons sugar

Oil

Instructions:

  1. Soften rice cake, cut into pieces.
  2. Wrap the rice cake and brown sugar in spring roll wrappers.
  3. Fry in hot oil until golden and crispy. Sprinkle with more brown sugar and fry briefly.

#4 Coconut Rice Cake Balls

Ingredients:

200g rice cake

50g shredded coconut

2 tablespoons brown sugar

Oil

Instructions:

  1. Soften rice cake, cut into pieces, and coat with shredded coconut.
  2. Shape into balls.
  3. Sprinkle with brown sugar and let cool.

#5 Brown Sugar Rice Cake

Ingredients:

200g rice cake slices

3 tablespoons brown sugar

Oil

Instructions:

  1. Soften rice cake slices in hot water.
  2. Pan-fry slices with a little oil until slightly crispy.
  3. Add brown sugar and cook on low heat until caramelised.

#6 Crispy Fried Rice Cake

Ingredients:

200g rice cake slices

2 tablespoons sugar

Oil

Instructions:

  1. Slice the rice cake into thin pieces and soak in hot water for about 10 minutes to soften.
  2. Heat oil in a pan to 180°C. Fry the rice cake slices until golden and crispy.
  3. Remove and drain excess oil. Sprinkle with sugar and mix well before serving.
